Mediterranean Cous-Cous with Chicken

Transport your taste buds to the shores of the Mediterranean with our mouthwatering Mediterranean couscous with tender chicken. This exquisite dish features perfectly cooked couscous grains, paired with succulent, seasoned chicken, and a vibrant blend of Mediterranean herbs and vegetables, creating a symphony of flavors that will leave you craving more.

Ingredients

250g CHERRY TOMATOES

BLACK OLIVES

100g FETA CHEESE

1 TABLESPOON OF DRIED CAPERS

1/2 TEASPOON OF OREGANO

1/2 TEASPOON OF BASIL

BLACK PEPPER

300g CHICKEN BREAST

1 TABLESPOON OF OLIVE OIL

2 CLOVES OF GARLIC

1 VEGETA VEGETABLE STOCK POT

150g COUSCOUS

JUICE FROM 1/2 A LEMON

1 TABLESPOON OF APPLE CIDER VINEGAR

1 TABLESPOON OF CHOPPED PARSLEY

Preparation

PREHEAT OVEN TO 190°C. GREASE A 23x23 CM BAKING DISH (OR SIMILAR SIZE).

MELT BUTTER IN A LARGE PAN. ADD GARLIC AND FRY FOR 30 SECONDS UNTIL FRAGRANT. STIR IN FLOUR AND FRY BRIEFLY UNTIL GOLDEN BROWN.

MIX TOGETHER WATER, MILK, COOKING CREAM AND VEGETA GOURMET, AND GENTLY POUR INTO PAN, STIRRING CONSTANTLY UNTIL THE SAUCE THICKENS, ADD IN OREGANO, THYME AND WHITE PEPPER. STIR IN GRATED PARMESAN AND 200G MOZARELLA AND STIR UNTIL THE CHEESE IS MELTED.

ADD COOKED PASTA AND CHICKEN INTO A LARGE DISH. POUR IN SAUCE AND MIX WELL. TRANSFER PASTA MIXTURE TO THE PREPARED BAKING DISH AND SPRINKLE WITH THE REMAINING MOZZARELLA.

BAKE UNCOVERED FOR ABOUT 20 MINUTES UNTIL GOLDEN. SPRINKLE WITH PARSLEY, SERVE AND ENJOY!
