Zucchini and Cheese Fritters

Ingredients
2 ZUCCHINIS (350G)
1 TEASPOON OF VEGETA GOURMET
2 EGGS
80g PLAIN FLOUR
40g ONION
1 CLOVE OF GARLIC
30g PARMESAN CHEESE
100g GRATED MOZZARELLA
3 TABLESPOONS OLIVE OIL
BLACK PEPPER TO TASTE
Preparation

GRATE THE ZUCCHINIS AND PLACE THEM IN A CLEAN KITCHEN TOWEL. SQUEEZE OUT ANY EXCESS MOISTURE FROM THE ZUCCHINIS.

IN A MIXING BOWL, WHISK YOUR EGGS, ADD PLAIN FLOUR AND VEGETA GOURMET UNTIL COMBINED. THEN ADD YOUR GRATED ZUCCHINI, FINELY SHOPPED ONION, MINCED GARLIC, GRATED PARMESAN AND GRATED MOZZARELLA. MIX EVERYTHING TOGETHER WELL. TASTE AND ADD BALCK PEPPER IF REQUIRED TO TASTE.

IN A LARGE SKILLET, HEAT OLIVE OIL OVER A MEDIUM-HIGH HEAT UNTIL HOT BUT NOT STEAMING.

DROP SPOONFULS OF THE PREPARED MIXTURE INTO THE SKILLET FLATTENING THEM SLIGHTLY WITH THE BACK OF THE SPOON TO FORM FRITTERS. MAKE SURE NOT TO OVERCROWD THE SKILLET. CONTINUE IN BATCHES.

FRY THE FRITTERS FOR ABOUT 2-3 MIN EACH SIDE OR UNTIL GOLDEN AND CRISP. (YOU MAY NEED TO ADD MORE OIL IF THE SKILLETS BECOMES DRY)​

REMOVE FRITTERS FROM THE SKILLET AND LINE THEM ON A PLATE LINED WITH PAPER TOWELS RO DRAIN EXCESS OIL
