Tomato Basil Soup with Dumplings

Ingredients
500g PASSATA
300mL WATER
2 CLOVES OF GARLIC (MINCED)
1 TEASPOON VEGETA GOURMET
2 TEASPOONS OF FRESH BASIL
1/2 TEASPOON BLACK PEPPER
2 TABELSPOONS OLIVE OIL

FOR THE DUMPLINGS
3 TABLESPOONS ALL PURPOSE FLOUR
1 EGG
1/2 TEASPOON SALT
Preparation

IN A LARGE POT, ADD YOUR TOMATO PASSATA AND WATER AND BRING TO A BOIL.​

ONCE IT BOILS, REDUCE THE HEAT AND ADD IN YOUR MINCED GARLIC, VEGETA GOURMET AND BASIL AND COOK FOR 10 MINUTES ON A LOW HEAT COVERED.

WHILST WAITING FOR IT TO BOIL, PREPARE YOUR DUMPLINGS MIXTURE BY COMBINING YOUR FLOUR, EGGS AND SALT UNTIL IT BECOMES A THICH DOUGH.

WHILST THE SOUP IS BOILING, WITH A SPOON SCOOP A BITE SIZED AMOUNT OF THE DOUGH AND WITH ANOTHER SPOON SCRAPE IT OFF INTO THE SOUP UNTIL YOU HAVE NO MORE DOUGH.

REDUCE THE HEAT TO THE LOWEST SETTING AND LET IT SIMMER FOR ANOTHER 5 MINUTES.​

TOWARDS THE END OF THE 5 MINUTES, STIR IN YOUR PEPPER AND STREAMLINE YOUR OLIVE OIL IN WHILST STIRRING. TAKE OFF THE HEAT AND SERVE WARM.
