Ingredients

1 LARGE ZUCCHINI
2 EGGS
30g PLAIN FLOUR
1/2 TEASPOON VEGETA GOURMET OR ORGANIC
200g MOZZARELLA (GRATED)
40g GRATED PARMESAN CHEESE
1 TABLESPOON OLIVE OIL
1/2 RED CAPSICUM (STRIPS)
1 TEASPOON OREGANO
1 TOMATO (SLICED)
1/2 ONION (SLICED)

Preparation

GRATE YOUR ZUCCHINI AND LET IT DRY OUT ON A TEA TOWEL

IN A LARGE BOWL, ADD BEATEN EGGS, FLOUR AND VEGETA GOURMET ALONG WITH THE GRATED ZUCCHINI, THEN STIR IN YOUR MOZZARELLA & PARMESAN.

PLACE THE MIXTURE INTO A GREASED CIRCULAR BAKING TRAY & SPREAD TO THE EDGES. BAKE IN A 220°C PREHEATED OVEN FOR 20 MINUTES UNTIL BROWNED.

REMOVE YOUR ZUCCHINI BASE FROM THE OVEN AND ADD YOUR SLICED TOMATO, ONIONS AND CAPSICUM STRIPS EVENLY

SPRINKLE YOUR PARMESAN CHEESE & OREGANO, REDUCE YOUR OVEN TEMPERATURE TO 200°C AND CONTINUE BAKING FOR ANOTHER 15 MINUTES UNTIL THE CHEESE IS MELTED AND VEGETABLES ARE BROWNED
